Keeping unchanged the 16th Century masonry structure of the barrel vaults, the restaurant “Le Selve” is a simple place where cuisine, tradition and tastes combine in a warm and welcoming atmosphere. This place used to be the stockroom for the supplies and the harvest of the farming families. Today it is a place to enjoy a delicious traditional meal.
Our menus offer typical dishes of the local Piceno tradition, cooked with products coming from our gardens according to the season. The short supply chain is a lifestyle here and represents the authentic values and qualities of the territory, which still today express an ethical approach to the agriculture and farming.
The cold cuts and the cheeses, like the prosciutto crudo, the ciauscolo, the lonza, the seasoned pecorino cheese, are all coming from local businesses. The homemade egg pasta comes with distinctive tastes like porcino mushrooms, the black truffle of the Monti Sibillini or wild boar meat. The meat plays a key role thanks to the wild game, the grilled lamb, the beans with pork rind, the tripe and the exquisite olives ‘all’ascolana’. As well as the traditional meals, you can try a large variety of pizzas.
During the summer it is possible to eat ‘al fresco’ in the garden which allows you to enjoy the natural surroundings. Breakfast is served in the dining room of the hosts’ house: it is a comfortable family environment where tea and coffee are served with homemade pastries and jams.
